ΚΟΛΟΚΥΘΟΚΕΦΤΕΔΕΣ

  • 1 kg of medium size zucchini
  • 250 g soft feta cheese, crushed
  • 150 g flour for all uses
  • 1 cup spearmint (the leaves), finely chopped
  • 1 cup of parsley , chopped
  • 1/2 cup dill finely chopped (without the stalks)
  • 2 eggs, preferably organic
  • salt, freshly ground pepper
  • olive oil, for frying
  1. Grated the zucchini on the grater, put them in a strainer, salt them, stir and leave them for 15 – 20 minutes to drain. Squeeze them well with our hands and put them in a large bowl. Add all the other ingredients and stir.
  2. Mix gently (so that zucchini do not make any more liquids). The mixture should be able to be rolled, otherwise we pour some more flour. We cut walnut-sized croquette, flour them and shake them to leave the excess. Fry the croquettes and turning them regularly to brown them
